Yanagiba Japanese kitchen knife Ittetsu Forge-welded Shirogami 2 IJF-11123 21cm edge retentionThe Ittetsu Yanagiba IJF 11123, a Japanese knife with a 210 mm blade. Carbon steel grades Shirogami #2 is used to forge weld the blade. Magnolia is used to make the handle, which is water resistant. To aid obtain consistent slices, this knife has a bevel on only one side of the blade. Because carbon steel rusts easily, it needs to be maintained clean and dry at all times to prevent oxidation and discoloration. Wash by hand in warm water, then pat dry.
