Apostoles Palo Cortado 30yo 37.5cl Every Day Drinking Made from a blend ofPalo cortado is a special type of sherry that starts its life and maturation under protective flor, destined to become a fino or amontillado. Partway through the maturation it loses its veil of flor and begins oxidative ageing as an oloroso sherry would. This combined maturation results in a wine with some of the richness of oloroso and some of the freshness of amontillado. It is a rare beverage though as just 1 to 2% of the grapes pressed for sherry
