Deba Japanese kitchen knife Ittetsu Forge-welded Shirogami 2 for left-handed IJF-11108L 18cm with its lovely cherry redThe Ittetsu Deba knife IJF 11108L has a 180 mm carbon steel Shirogami #2 forge welded blade. Magnolia wood is used to make the oval shaped handle. This type is designed for left handed use and has a single bevel blade. Because carbon steel rusts easily, it needs to be maintained clean and dry at all times to prevent oxidation and discoloration. Wash by hand in warm water, then pat dry. Handmade in Echizen, Japan, are Ittetsu knives.
